“Attack of the Killer Tomatoes” needs a sequel — “Attack of the Killer Zucchini.” Garrison Keillor had a good story about about the yearly garden overproduction of zucchini and tomatoes.
I recall reading about a gal who couldn’t even give the stuff away, so she packaged them up like presents, and would leave them in her unlocked car. Someone would invariably steal the “gift”, and boy were they in for a disappointment! (personally I think she was a bit psycho, but that could just be me!)
I have a pretty tasty recipe. Put water on to boil if using pasta. If using rice start cooking it. Large skillet, add 2T olive oil, start heating. Dice one zucchini, one yellow squash and add to skillet. Chop an onion in half and slice so that the slices are half moons. Add to skillet. As this mixture starts to gently brown, add orzo pasta to the water (or watch the rice to make sure it is cooking). Cover the skillet. Rinse and drain a can of black beans. The squash should be tender now. Add 1/4C low sodium soy sauce and stir around. Pour in half a jar of your favorite pasta sauce. Chop up a tomato and a handful of fresh green beans. Add the tomato, green beans and black beans to the skillet and stir. Chop up a fresh peach (skin on or off) add to skillet. Drain the pasta and mix in to the skillet or add the rice and stir well. Serves 4 as a side dish or 2 as a main dish. Takes 20 minutes to make.

There’s pineapple zucchini, lemon zucchini, coconut zucchini, pepper zucchini zucchini soup, zucchini stew, zucchini salad, zucchini and potatoes, zucchini burger, zucchini sandwich. That- that’s about it.”
