All those dozens of little “mise en place” bowls, aaargh! But those shows have a full cleaning staff and an industrial size dishwasher, so it’s no big deal … for them! Me, all I’ve got are my own two hands and my kitchen sink, so mise en place has no place in my kitchen, even though I do a lot of cooking from scratch.
This is why I liked cooking for a living in restaurants.I had other people to help prep,and wash the pots pans and dishes.(Now I have a hard time standing for more than a few minutes)
At times I take ’em on immediately after the meal. Other times, I just add detergent, run the water to almost steam, fill the pot and let it sit for however long I feel like it. Usually rinsed clean and finished with a soft fibrous pad. Just depends on the day, schedule, and inclination. Not my favorite activity.
When it comes to the cooking, my wife insists that I stay out of HER kitchen. When it comes to the cleanup I insist that she stays out of MY kitchen.
This is one of the reasons I rather barbecue. I’d rather clean the grill than do the pots and pans. Also food tastes a LOT better when done on the grill.
Washing and cooking take place at the same time in a small kitchen. Our agreement is I cook and she washes and puts away but the only part left for her to wash (put in the dishwasher) are the serving dishes and pots and the dinner ware.
