Adam: Can I buy a pound of that coffee you just roasted? Barista: Of course. Remember to let it rest for 24 hours for maximum flavor. And no grinding until just before you brew. And never put the beans in the fridge. It damages the bean. Adam: Andre, how many times do I have to tell you? I am not as dumb as I look.

Yes, if you just fold the little bag over and toss it in the fridge, your coffee will taste like last weeks broccoli, but if you keep them in a dry, airtight container, refrigerating/freezing coffee beans will extend their shelf life dramatically. Fresher is always better of course, but that’s true of almost anything. I prefer fresh vegetables, but if I have to eat them a month old, I’d much rather they were frozen than not.
