I do wish I had thought of the kids answer when it was being forced on me as a child. It would have been worth the spanking or grounding I would have been sure to receive!
I love butternut squash (most others are a little stringy), but it takes less time to peel yams ((no cleaning inside) and they’re about the same nutritionally, I always keep slices parboiled in the freezer. Great with black beans cooked from scratch and any meat.

I love squash the way my mama cooked it. But then any vegetable is good when sauteed with chopped green onion and real butter.
