He only has one sister, so why is there no apostrophe before the S in “sisters”?

If you are talking about the possession of two sisters, then the apostrophe goes after the final s: sisters’.

No, dflak, there’s no possessive here, so no apostrophe! His sisters (plural noun, subject of sentence) averaged 12 [points].

Of course a really good chant takes three to four Klingons and a Klingon elder to correct mistakes….
