There are some vegetables that sweeten after the first frost and should not be harvested till then. Alternatively, you could freeze them yourself. Parsnip, Brussels Sprouts and Broad beans are three that come to mind. There may be others. Parsnip is also improved with butter.

I belong to the “SPPPPPPEP”; i.e., the Society for the Prevention of People Putting Parsley on Plates in Public Eating Places!

Sorry, Samson, but tomatoes aren’t veggies. I know we treat them that way, but they aren’t.-Anyway, if someone throws a tomato at you, just catch it and eat it. They don’t make eyes water like onions do, and aren’t heavy enough to hurt your foot if you drop ’em. And they either taste good (like Heirloom tomatoes) or taste like nothing except salad dressing (most tomatoes raised to be picked by machines while not ripe and gas-ripened during transport)…

Is that first vegetable a Rickled onion?:(That’s not a spelling mistake; it’s a joke)

I really like parsnips myself. I often add some parsnips and carrots to chili.
