Although potatoes may be referred to as root vegetables, regular potatoes are not roots – they are tubers – a form of underground stem. (The eyes of a potato are buds.)
Sweet potatoes, on the other hand, are true root vegetables, like carrots and beets (and radishes and turnips and parsnips) are.
