On my many life travels, I fell in love with “volcanes”, not the sweet Mexico City stuff but the Merida stuff which are fried bean patties dipped in a “bolsita” with a sweet and slighty spicy tomato sauce. I discovered that based in your location in the city volcanes changed appearance, texture and even recipe.
