Even I’ve tried to make hash brown patties out of cauliflower once or twice. As for trying to eat pre-made cauliflower hash brown patties from Green Giant®, not very tasty (must’ve been the parmesan cheese).
I love cauliflower as long as it is smothered in cheese sauce like my broccoli. In fact ANYTHING smothered in cheese sauce is the greatest treat on the face of the planet.

When I was there having something that wasn’t pizza, I decided to try the loaded mashed cauliflower and discovered that I loved it. (Hey, with bacon, cheese and chives you’d be hard-pressed to tell it from potatoes.)
A while later I was back there and it was no longer on the menu. I asked the waitress and she said they took it off because it wasn’t very popular. Five minutes later I hear from the table behind me some total stranger also try to order the loaded mashed cauliflower.
My ex hated cauliflower. We were invited to a friend’s house for dinner & she served a cauliflower casserole. The ex took a huge helping, which surprised me but I thought maybe he was just being polite, so I didn’t say anything. Halfway thru the meal, he proclaimed the casserole to be the best potatoes he had ever eaten.
I’m with Earl. There is a time and a place for everything … and a good New England clam chowder is not the place for cauliflower to be masquerading as a potato!
When I was a kid, we went to visit my cousins; we stayed up late & watched Outer Limits. In the climactic shot at the end it was revealed that the psycho-killer alien was mostly humanoid – except his head looked just like a stalk of cauliflower.
I make an excellent soup that includes as an ingredient sliced red potatoes. I subbed cauliflower, and found that not only was the soup better, but it took 15 fewer minutes to cook. (The cauliflower took 5 minutes to the potatoes 20.). I was pleasantly surprised.
He could at least have gotten an opinion from Roscoe, who in real life would eat it fast, but in the cartoon would have refused it just to make us laugh.
bought some frozen vegetables a bit ago, rice with various mixed vegetables. Except I didn’t notice it wasn’t rice, it was riced cauliflower. I haven’t dared try it yet.
I think part of the problem is how people are using the word “substitute.” If you know it’s cauliflower clam chowder, you don’t expect it to taste like potatoes, and it might not seem so bad. My mom made stroganoff with ground beef and poured the sauce over rice. Now as an adult, I try to be more accurate and call it “mock stroganoff” or “beef and mushroom sauce over rice” or “mushroom sauce over beef and rice.”

Don’t blame you Earl. I’m sure there are plenty of people that love both cauliflower and clam chowder. I’m just not one of em.

Cauliflower is NOT an acceptible substitute for potatoes. Just because it’s the same color does not mean that it tastes anything like a potato.

I love al dente cauliflower with butter and S&P. And raw cauliflower, too. Many veggies people hate are hated simply because they are overcooked.

Everyone “hops on the bandwagon” when something new comes out. You can’t substitute cauliflower for good old potatoes. I love them. So, deal with it.
