Most of what we call “Mexican food” is TexMex. It gets better the farther up the Rio Grande you get, away from Texas. Spanish names for native food from the pueblos.

I want the name to identify the food so I know what I’m eating. I don’t care about its antecedents.

Wait! You mean that Hungarian goulash my mom use to make was neither goulash or Hungarian??
