Raised on a farm. Ate it all. Hunted and fished. When you grow up in need – food is good. My late wife was blessed with same skills. Raise it and eat it.

In my experience liver and onions is one of those dishes where someone either knows how to prepare it or they don’t. Too many people end up with liver that tastes, and chews, like shoe leather. Thankfully there are those (like the cook at a local bar I eat at every two or three months) who can make it flavorful and tender. I loved it when my grandma made it (them?), they were wonderful, but somehow my mother never had the knack. Hers was so-so.
