The fact is that legally the sign is lying. Injuries on premise will still hit their insurance and potential lawsuits – with a good chance of being won
Kinda like those “Cars parking illegally will be towed at owner’s expense.”.Since they never specify if they mean the owner of the car, or the owner of the business, the next time that happens to me I’ll present the proprietor with my towing bill and demand that he pay it.
A now bankrupt Atlantic City casino offered valet parking. A sign where you dropped your car off read that they were not responsible for items left in your car. Basically giving the valet parkers the right to steal anything they could find.
Every time I get disgusted with Trump and what kind of POTUS he would make I think of the alternative. I then toll up into a ball over in the corner of the room trembling and crying. Not a pretty sight for a man to do that.

The sign is useless. It will only deter those unwilling to spend the money to begin the litigation. Once litigation has begun, loser pays all costs. (I know, no such thing as an absolute. just write it into the litigation!)
