Based upon my knowledge of the Italian language, the singular of ravioli and spaghetti (as examples) respectively are ravilolo and a spaghetto. So I had always thought the singular of zucchini was zucchino.

A few years ago, my wife planted six tomato plants in her garden. She had no idea how many tomatoes she would get when she planted them. In the fall we had to ask the neighbor down the road to send his son down with his front loader. We filled the bucket and had more left over!

Both singular and plural: zucchini. However, singular is pronounced zucchi-NEE, and plural is pronounced zucchi-NYE. You can look it up.
