As far as I know, cosmologists didn’t think the Universe was “flat like a pancake”. When they said the Universe was flat, they meant it was Euclidean. That is, the Euclidean postulates held. A non-Euclidean Universe was curved on a large scale, making things like triangles with sums of angles greater than or less than 180°, depending on the type of curvature.
The “cosmic speed limit” is the speed of light in a vacuum. But, it doesn’t apply to the expansion of the Universe itself. The expansion of the Universe is causing some galaxies to be moving away from us faster than the speed of light. One consequence is, no matter how old the Universe gets, we will never be able to see anything more than 46 billion light-years away from us.
The truth is in science what they (Scientist) don’t know outnumbers what they do know by a billion to one. So what theory they think is right today will most likely be proven wrong by Tuesday. They will have a new theory on Wednesday and so it goes.
