Having cooked many a pumpkin, I can tell you, you want to get the seeds & strings out!!! And, they are very versatile, hence the Colonial propensity for incorporating them into everything they could. And, livestock can eat them too.
October? The pumpkins have been for sale since early September, and there are already very few left. I’m wondering what they’ll look like on actual Halloween night.

You don’t have to be carved to be attractive. Uncarved pumpins show off their true beauty, while plain pumpkins have to be carved to get attention.

Note that the variety of Pumpkins sold for Jack-O-Lanterns are actually used for that because they make Terrible Pies.
