There are a lot of places—Chicago comes to mind—where that doesn’t reflect on the establishment. You pay bribes in any case: either so the inspectors overlook infractions, or so that they don’t invent them.
Do what every other restaurant did post-pandemic: halve the portions or double the cost, or a little of both. I can’t blame ’em too much though, the cost of the ingredients nearly doubled as well.
