When Country Breakfast was on the menu at the prison I worked at, we prepared mentally for a long day. It seemed that everyone came to the dining facility at the evening meal, after all IHOP made a fortune serving breakfast at anytime of the day.
Growing up we would have pancakes with maple syrup or jelly for supper. It never occurred to me that was all my parents could afford. I still sometimes fix pancakes for our supper, but use molasses or honey instead of maple syrup or jelly these days.
When my parents were first married my dad was enlisted in the Air Force. They got paid one a month, and hadn’t gotten real good at budgeting yet. I can remember having Bisquick pancakes for dinner or biscuits and gravy for dinner many times.
I’m sure someone will correct me if I’m wrong, but I recall reading that we should switch our meals around. High protein for breakfast to power the day and good carbs for dinner to help you fall asleep at night. Pancakes fit my dinner plan any day.
