The sharper the knife the less tears. But when it comes to preparing that amount of chopped vegetables and the like in a bistro’s kitchen I would for sure invest in a food processor. Not only to speed up the process but to keep accidents from happening.

Other ideas- keep the bowl you put the chopped onions into covered with a damp towel and clear the cut onions off the cutting board frequently. And a fan blowing from behind you to push the cut onion vapors away from you (or in a nearby window, blowing out). Anything to reduce the concentration of onion vapors in the air around you.
I got a Fullstar 4 in 1 chopper when amazon had them on sale, now they have a coupon to make them on sale again. The spiralizer isn’t very good unless you are cutting a carrot sized item. Other than that, it is awesome!
When Covid started I stopped using fresh produce as I was concerned about others have touched the produce. I used frozen or canned instead.
One thing which is really great about frozen produce is that is cut up/peeled already. Another thing is that I can use the amount I need and not have to the leftover sitting in the fridge (and if like onions – smelling it up) until it reaches the point where it has be tossed out (and becomes a waste of money).
The only canned vegetables I use are tomatoes and mushrooms and then only because they do not come frozen.
