I only fix steak two ways…..raw or burnt.
That steak doesn’t look smoke free.
Just put two thick cut pork chops in the crock-pot to BBQ. Should be done in three hours or less.

I enjoy the occasional blackened steak or chicken, but not that type of blackening.
And the smoke has its own special flavor.
As opposed to ’You are free to smoke".
