A local family restaurant here, that I worked 30 years for, is the biggest buyer of lake perch in Michigan. They serve perch sandwiches and dinners all year round. Russ’ Restaurants, Holland, MI.
Most fresh fish has been frozen on the boat that caught it, before it makes it to the store or restaurant. Only way to get it fresher is catch it yourself.
Doesn’t sound fresh to me but it was fresh at one time during its existence. Might have even been fresh frozen. But fresh, it is not. Just get a hamburger……
When I was in college in Erie, students lobbied for the dorm cafeteria getting more food locally (until then, almost all food came from across the State from the main campus, and was usually stale). One of the new local items was some sketchy fish caught locally… with Lake Erie’s pollution problems at that time, we called it “Lake Erie Floating Fish”… Then one dinner they served us whole fish that had not been prepared – just coated in breading… scales, fins, head, bones and all… caused another student uprising…

Just make Brutus a grilled tuna sandwich and tell him its perch… he probably won’t know the difference.
