So there were crab cakes in the seafood case, next to the shrimp. I asked the nice lady, “Are those crab or surimi?” She smiled, hesitated, and dropped her voice just a bit. “They have imitation crab.” #1) How can a whole industry get away with outright LYING? When surimi broke into the US market decades ago it was usually referred to as Krab. #2) Why call it ‘imitation crab’? It is a perfectly good prepared seafood product in its own right. Call it surimi. Crab surimi if you want. I have seen it flavored with lobster too. #3)Can we start a campaign to petition the FDA to stop this? Is there any way to let producers and restaurants know that if we like the stuff then we will buy it under the right name? I have made a point of buying surimi when I find it labeled correctly. I would definitely eat sushi with surimi; but never with raw fish. “I will eat sushi on a dish. I will not eat it with raw fish!”
