I try to replace recipe items with equivalent “healthy” subsitutes whenever possible. Since I have Hypertension, I’m supposed to restrict my intake of sodium, sugar and fat which come in many forms, especially when baking. For example baking soda is sodium bicarbonate. Baking powder is loaded, too. I buy calcium carbonate to replace baking soda and Featherweight Baking Powder which is also sodium free. I replace sugar with Stevia. Stevia even has a brown sugar-stevia combo. I make a awesome pumpkin bread and I don’t feel guilty eating it.
If you are trying to make something low-carb, don’t try for low-fat at the same time. You might as well just eat protein powder at that point. Nothing else is left.
I have made some keto baking recipes with almond flour and sugar substitutes for my diabetic husband. Some were flops, but others the whole family enjoyed. Maybe not as well as the real thing, but take your wins where you get them.

Actually not all that bad. But oat flour would be better. And low fat margarine wouldn’t work since it’s only there for the fat content!
