    I have a great way to fix zucchini. First you peel it… and throw the peel into the compost. Then you cut it in half lengthwise, and take out the seeds… and throw the seeds into the compost. Then you cut the halves into 1/2 inch cubes (approximately)… and throw the cubes into the compost.

    Then you order in.

    Make lots of zucchini bread and freeze it. Throw it out next year when you plant zucchini again.

    Zucchini are often feast (a ton) or famine (none). Here the deer, squirrels, rabbits, voles and etc. assure you can’t grow much of anything.

    Zucchini actually is my hubbie’s favorite veggy. We are down now to kind of a muffin dough with grated zucchini, grated onions, grated cheese, grated almonds as a substitute for flour. Then throw the batter in a caserole anf bake it. His new favorite. – I have to admit that we mostly cook different things for each of us :-/

    If anyone is interested as to what to do with THEIR overabundance of zucchini, you can thinly slice, dehydrate and render to a powder in your blender. Store in glass jars. Gluten-free flour!

    Dad was a firefighter as well as an avid gardener. I remember the summer of zucchini; after we’d had our fill, or over-fill would be more accurate; he took bags of the darn things to the firehouse to share. It was suggested by his ‘mates’ to please not plant them again. LOLOL. I miss him every day.
