Earl almost stepped in it.

I have a great way to fix zucchini. First you peel it… and throw the peel into the compost. Then you cut it in half lengthwise, and take out the seeds… and throw the seeds into the compost. Then you cut the halves into 1/2 inch cubes (approximately)… and throw the cubes into the compost.

Then you order in.

hmmm⠄⠄⠄ Ⅰ wonder

I’m sure there’s a charity that would love to get all that zucchini. Meanwhile, cheer up, Earl. Things could be worse. Opal could have served you canned veg instead. Or – she could have asked YOU to make dinner for a change…

At least they are not going to waste!

Make lots of zucchini bread and freeze it. Throw it out next year when you plant zucchini again.

Pickles is running on zucchini strips!

Zucchini are often feast (a ton) or famine (none). Here the deer, squirrels, rabbits, voles and etc. assure you can’t grow much of anything.

With me it is yellow pole beans every year. I eat tons for 2 or 3 months and then I’m done for the year.

Zucchini actually is my hubbie’s favorite veggy. We are down now to kind of a muffin dough with grated zucchini, grated onions, grated cheese, grated almonds as a substitute for flour. Then throw the batter in a caserole anf bake it. His new favorite. – I have to admit that we mostly cook different things for each of us :-/

Those all sound delicious! They could be frozen and saved for later!

Just an idea, but maybe plant something else next year.

When my son worked in the produce section, a friend of mine told him to make sure he knew where the zucchinis & cucumbers were for the ladies.

I see Opal doesn’t know about the latest craze for cooking zucchini, making noodles and using pasta sauce as a covering.

Ummm… never mind, mixed company…

Opal has some awesome recall. I think Roscoe was fed a zucchini omelette, too.

If anyone is interested as to what to do with THEIR overabundance of zucchini, you can thinly slice, dehydrate and render to a powder in your blender. Store in glass jars. Gluten-free flour!

For Pete’s sake! Just call for a pizza!

The variety of dishes in the Pickles household is mind boggling.

Earl: What are we giving out for Halloween?

Opal: Zucchini

Earl: Again?! We had only half the neighborhood kids visit us from the prior year.

Dad was a firefighter as well as an avid gardener. I remember the summer of zucchini; after we’d had our fill, or over-fill would be more accurate; he took bags of the darn things to the firehouse to share. It was suggested by his ‘mates’ to please not plant them again. LOLOL. I miss him every day.

Oh, come on Earl ….. I dare you to repeat it ……… :)
