Reminds me of Myrtle Beach 20 years ago when the law was that they had to use the single shot bottles when making mixed drinks to prevent “heavy”, “light” or “watered down” pours.
I don’t drink, but having my own mini-bartender might be interesting enough to pay for the up-charge. As long as he leaves for the night before I go to bed, and doesn’t return until after breakfast.
A close and long-term friend has owned sever al bars in the past. Many moons ago, he explained the financial aspect:
A quart of liquor has a fixed wholesale price. It contains 32 oz of fluid. The rule of thumb is to charge enough per 2-oz drink to pay for the wholesale cost of the bottle within 3 to 4 drinks. After paying the costs of place and license, the rest is profit. If the owner also is the bar-tender, it’s rather difficult to not make money on the deal.
Of course, that’s also presuming the place is not so popular, and that a bouncer is not required. Same goes for having to have a waiter/waitress – or at least one who is on salary. My friend was his own bar-keep, and any service person was there to earn tips, not a salary.
