All that said, my question is, where do brownies fit in? Are they a cake, a muffin, a cookie, or a totally different species?

We were taught to fold the wet and dry ingredients together with no more than 12 strokes to keep the texture a bit coarse and rustic. These muffins had things like wholemeal flour in them, with maybe some dates for sweetening.
Over the years the commercial bakeries have given us the cake texture muffins with things like chocolate chips and the lines have blurred.
A muffin is an acceptable breakfast food. While a cupcake is a desert. If you feel like eating a cupcake for breakfast, then tell everyone it’s a muffin. (if they ask)

There used to be a big difference between cupcakes and muffins. Then Big Food decided that calling giant cupcakes “muffins” made them sound healthy. Look up muffin recipes in an old cookbook. Not much fat or sugar, and MUCH smaller size.
