    Muffins have a denser texture than cupcakes. They also tend to include more spices and fillings like nuts or fruits, so the flavors are spread throughout the muffin instead of being added on top. While some muffins can have a thin glaze or powdered sugar topping, most cupcakes require a frosting to enhance their flavor. It isn’t the basic ingredients in each as much as the way the batter is prepared. Cupcakes are made by creaming the butter and sugar together a long time to create a smooth, fluffy batter. Muffin batter, on the other hand, is beaten briefly and remains a bit lumpy (a lot of packaged muffin mixed will say stir or mix until moistened; packaged cake mixes will often say to beat at high speed fora short while and then at medium speed for a longer period). All that said, my question is, where do brownies fit in? Are they a cake, a muffin, a cookie, or a totally different species?

    When I was taught to make muffins in home ec class back in the miocene epoch, there really was a difference. We were taught to fold the wet and dry ingredients together with no more than 12 strokes to keep the texture a bit coarse and rustic. These muffins had things like wholemeal flour in them, with maybe some dates for sweetening.

    Over the years the commercial bakeries have given us the cake texture muffins with things like chocolate chips and the lines have blurred.

    There used to be a big difference between cupcakes and muffins. Then Big Food decided that calling giant cupcakes “muffins” made them sound healthy. Look up muffin recipes in an old cookbook. Not much fat or sugar, and MUCH smaller size.
